In the Aspen Room, we present to you what the French call terroir, a "taste of the place" from the part of the world in which we belong. Treat yourself to the fresh and satisfying fare that adventurers such as Lewis and Clark discovered on their journey west.
Our area is reputed to be the last settled area in the lower 48, truly "the last frontier". Native Indians and Oregon Trail pioneers contributed to the unique and flavorful history and cuisine of our area here, in the heart of the American West. Our menu includes centuries-old recipes and techniques for you to enjoy.
Included in our menu are braises prepared with cured side pork. The salt spring near us provided a valuable commodity for Native Americans. Some traveled hundreds of miles to collect their yearly supply of salt for curing and seasoning. Chief Tyghee (for whom our own Tygee Valley is named) of the Blackfoot tribe cured meat in much the same manner. Dine with us on specially prepared Rocky Mountain cuisine seasoned with a literal taste of the place.
Our earthen ponds were dug by hand after WW II in 1945, and are still used to raise Snake River Cutthroat trout. We maintain the only private Snake River Cutthroat brood stock in the world; you are privileged to order them fresh from the water.
In addition to the fabulous tasting fish raised in our spring water, we have developed a special collection system at the mouth of this unique aquifer that enables us to supply drinking water to the Trout Ranch. This cool, crisp, water, from one of the purest tested mountain springs, hasn't seen the light of day for what scientists believe are thousands of years, until it has been poured into your glass-straight from the spring.
